- Soluble Fiber: Although it is indigestible, soluble fiber dissolves in water to form a gel during digestion. It is an essential dietary component that helps maintain good health, as it helps to slow digestion, nutrient absorption and it helps maintain regularity (see benefits of fiber). Soluble fiber includes pectins, gums and mucilages and some hemicelluloses.
- Insoluble Fiber: It is also an edible part of a plant, but unlike soluble fiber it does not dissolve in water. It is often referred to as "roughage. It absorbs water as it moves through the intestines. This results in softer stools and helps maintain regularity.

Legumes: plants of the pea and bean family. They are low in fat, high in fiber, and are an excellent source of protein. Legumes are also an excellent source of folic acid and potassium and they are a good source of zinc, copper, magnesium, iron and phytochemicals. The most commonly known legumes are lentils, beans (dried and string), peas, soy beans and peanuts.
