Thai Curry Chicken With Noodles – Khao Soy


This is a popular nightly feast in northern Thailand. There it is called Khao Soy. The original of this recipe calls for a garnish of a golden nest of crispy fried noodles. This is interesting as noodles are used to garnish a  noodle dish. Fried noodles are placed on top of this spicy noodle curry as a way to create a variety of texture and pleasing display.

Thai Curry Chicken With Noodles – Khao Soy

Keeping in mind that you do not want to add additional calories to this yummy meal I only added the fried noodles topping as a side note below the recipe.

Ingredients

  • 4 oz rice noodles
  • 2 tbsp red curry paste
  • 6 oz boneless, skinless chicken breast, cubed
  • 1 can (14 oz) coconut milk
  • 2 tbsp fish sauce
  • 2 tsp ground turmeric
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 2 tbsp lime juice
  • 1/2 cup chopped shallots
  • 1 cup water
  • water to boil noodles

Instructions

  1. Heat 2 tbsps olive oil in a deep skillet over medium heat.
  2. Add curry paste and cook until the spices release their fragrance.
  3. Add chicken and cook for about 5 minutes. Stir frequently.
  4. Stir in coconut milk, water, sugar, turmeric, lime juice and fish sauce. Bring to a boil, then lower the heat. Let simmer for about 10 minutes.
  5. Meanwhile, boil noodles for until done. Drain and rinse with cold water.
  6. Remove curry from heat. Sprinkle shallots, cilantro, green onions and crispy noodles on top.

Note: For the garnish of a golden nest of crispy fried noodles:

  • Deep fry a handful (or more) of rice noodles in 2 cups vegetable oil and use to garnish.
