If you ever have been in New Orleans, most likely you had an opportunity to taste their fabulous oysters and oyster dishes. The mew Orleans style omelette is one of them.
Oyster Omelette New Orleans Style
(This recipe is very yummy. I modified it to make it more low fat than the original recipe)
The Filling
Ingredients
- 3 slices bacon, chopped
- 6 shucked oysters
- 2 tbsp chopped green onion
- 1 tsp garlic
- 1 pinch of cayenne (powdered red pepper)
- 1tbsp olive oil
Preparation
- Fry the bacon until almost crisp
- Remove the bacon and pat dry it on a paper towel
- Add olive oil
- Heat the oil and add the oysters, bacon, garlic and green onions.
- Sauté until the edges of the oysters curl.
- Remove from the heat and season with a pinch of cayenne, then set aside.
The Omelette
Ingredients
- 1 tbsp canola oil*
- 1 whole egg and 2 egg whites
- 2 tsp skim milk
- Salt to taste
Preparation
- Combine the eggs, skim milk and a pinch of salt, then whisk together.
- Heat a skillet over medium heat and add canola oil.
- When the skillet is very hot, add the egg mixture.
- Cook without stirring, but gently tilt the skillet a little to allow the uncooked egg to run off.
- Flip and cook the other side for 1 minute, then remove from skillet.
- Place the filling in the center; fold and serve.
I use canola or another alternative oil to olive oil when using high heat.
